This caught me off-guard a few days ago, too....
I posted this under the support section and Tomas replied with the following answer:
The update of the "outofstock' flag on a product does not occur immediately any more for performance reasons. This update will generally occur within 24 hours. This does not affect the ability of purchasing a product since this status is really for display purposes only. So, after a product has been purchased and is 'out of stock', it may take a bit for the system to update the status so you have the red banner and the ability to have the 'SOLD' feature in your template.
When an item is added to the cart, it will check the live stock level of all of the variants and not the value of the 'outofstock' flag.
So it seems BISI is batching part of the out of stock processing. For me it means that:
1. Until the processing is complete.... in my store it will show none available, it will still show the price and add to cart button... and the red out of stock banner isn't showing in Admin
2. When the processing is complete... in my store it will show SOLD and the add to cart button is gone (a template mod from Jennifer).... and the red out of stock banner WILL be showing in Admin
I will say that when I first noticed this it was way past 24 hours and it still hadn't changed to the red banner... So I guess just keep an eye on it???

This goes both ways. For items that were sold but the order was then canceled, they are still showing the red Out of Stock banner, even though the order was deleted and the quantity was updated.
Where is this sold feature I've heard about and what does it do? I'm not seeing it anywhere.
