You can easily edit the XML doc using Excel but this method does not support variants. (Since Excel can't edit child nodes).
You'll need to remove anything that is in the entire <variants> node. I've attached an XML doc with no additional variants that you can use as a reference.
When opening an XML doc in excel, It will prompt you with the following:
Choose the "As an XML table" option.
This will load the document so you can edit your data just like you did in the spreadsheet method. When saving your product, you'll need to use the "Save As" and choose the XML Data option. (Not XML Spreadsheet!).
