Hi

I have a friend who is allergic to eggs, so I am always looking for eggless recipes for him.

I just saw on Yahoo that you can take a cake mix and add pumpkin, applesauce or plain yogurt instead of oil and eggs. You can make muffins or cookies. He asked for German chocolate cake with applesauce. I was leaning towards cookies.

Anyone try this kind of substitution? Any tips?

Anyone have  any egg-free recipes for goodies?

Hi Cathy,

Yes I've substituted with applesauce. It works great!! I too have a problem with eggs. I love eggs, I just can't eat what the white ones you purchase in stores. Hard eating breakfast out!! So I bought a couple of chickens and get fresh eggs everyday. The fresh eggs don't bother me and I get to eat eggs whenever I want.

Have used applesauce quite often....works well.  Works ok in meatloaf also.  Only tried pumpkin once.  Seemed to make the cake heavier and didn't want to stay together as well.

Hi

Thanks for the feedback on the applesauce! How do you tell how much to use? Are there specific recipes? One I saw was for  using pumpkin.

Using fresh eggs is something different!!!  We live in the country and never thought to try that! Thanks!!!

Hi,

The applesauce conversion is half the amount. So if your recipe calls for 1 cup of oil, you use 1/2 cup applesauce. I did a google on recipes and there were so many. Try that!! Also Kraft.com has great recipes too.

The reason you can eat your own eggs is prolly the lack of chemicals and antibiotics in the chickens themselves.

I have found that I feel better when I eat more (in quantity) organic vegetables than store bought. I have also found the "cruelty free" meat is better but I grew up in a region where we got local meat a lot and it was FAR better than anything in the stores.

As for applesauce & pumpkin. Never used pumpkin. Mom used applesauce in a lot of things, cookies, cake, cup cakes, brownies. Worked out fine. Actually makes them a bit more moist. She would also use a bean (I think kidney) in brownies. As long as you either fully break up the skin or use a strainer to seperate the bean from the skin, you don't even notice them. Only time I did was when she missed a skin! And the health factor in that is GREAT! But for her recipe, I have no clue if she used egg or not or what the conversion is. I know there are a TON on the internet though.

Many thanks for the feedback!! I did look online for recipes, but wanted to hear some real person feedback.

I never thought about the chemicals in chickens being the problem and will definitely pass on the thought!

The brownie recipe- I just got a bean cookbook and they had brownie recipes as part of their dessert section. I was looking at beans for longer term storage, but the variety of uses surprised me!
